My Most Favourite Christmas Cookie Recipe

Spread some holiday cheer with this simple yet super delicious Christmas cookie recipe that my mum and grandma taught me when I was a kid. We call them honey cookies. These make the perfect holiday season treat. With sweet honey flavour, infused with cinnamon and ginger they are bound the be the most popular cookies in the box this year. Vegan option included!

Growing up we would make this recipe every single year. These cookies are so yum, we'd make them quite a few weeks before Christmas, just to refresh and perfect the recipe. I don't remember it ever being written down in a recipe book, so we'd use team effort to recall the ingredients and quantities. I know this doesn't exactly start very promising, but trust me - the recipe works - plus it is quite simple.

Few years ago I made sure to write it down as I could never remember it fully and it wasn't something I wanted to risk forgetting now that we don't all live together with my family.

 

Ingredients to make Christmas honey cookies

  •  2x eggs
  • 1 cup sugar
  • 1 teaspoon bicarbonate soda
  • 600 grams flour
  • 1 cup honey
  • 1 cup melted unsalted butter or coconut oil
  • 1 teaspoon cinnamon (although I usually add more to flavour)
  • 1 teaspoon ginger

Optional

  • 50 grams finely chopped walnuts (these go inside the mixture)

For icing (optional)

  • Chocolate icing:
    • 100 grams chocolate
  • Classic icing: 
    • 1 egg white
    • lemon juice
    • 1 cup icing sugar

* Note - depending how much of a sweet tooth you have, you can adjust the sweetness. For example I normally add only 1 cup of honey, and no sugar. But if you want them well sweet, I'd add the sugar too.

For vegan option - you can drop the eggs and use coconut oil instead of butter and baking powder. The cookies will probably rise less than if you use eggs.

 

How to make the Christmas cookies

  1. Mix the oil and eggs together with a mixer or fork. Then add the sugar and honey and mix well.
  2. In a separate bowl, mix the flour, bicarbonate of soda, cinnamon and ginger until it's all mixed well together.
  3. Start mixing the dry ingredient with the wet, slowly adding few spoons at a time so it mixed well. You're going to end up with a sticky mix, so for or spoon is best to mix them together. The mix should be sticky but not too sticky that it sticks on your hands.
  4. Form a dough ball with your hands. I'd recommend that you put it in the fridge for 20-30 minutes as it is easier to work with.
  5. Once cooled, stretch the dough evenly, aim for about 0.5cm thickness and let the fun begin! You can start cutting out shapes and place them onto a baking tray lines with baking paper.

Bake on preheated oven at 180° C for 15-20 minutes. But keep an eye on them, you want them to start getting slightly gold, but not too much as they can easily end up being too hard.

 

For the icing

Melt the chocolate and spread on top of the cookies. You can also dip half a cookie in the chocolate and leave half as it is.

For the classing icing - mix the icing sugar with the egg white using a mixing spoon or mixer. Add few drops of the lemon juice until it mixes well. And you're ready to add the icing into a piping bag and start decorating!
